When it is worth replacing

What matters in a proper installation
Drains do not work under pressure; water flows down a slope. Too little slope and deposits settle and clog the pipe; too much and the water runs ahead and leaves solids behind. That is why the plumber checks the diameter and slope of every section.
The connection to the riser is especially important: an old cast-iron riser needs careful work, and replacing it is a matter for the whole building.
How the work goes
The plumber inspects the old line, plans the points with you, removes the old pipe, fits the new one with brackets and tests it by running water from every point. The price by number of points and line length is given after an inspection, as open sources differ several times over per point.

Can just one section be replaced?
Yes, for example from the kitchen sink to the riser. The plumber will tell you whether replacing the rest of the line makes sense.
Will the riser be replaced?
The riser is a pipe shared by the whole building, and replacing it is usually agreed with the neighbours and the building association. The plumber can replace the section on your floor if that is agreed.
